Indian is a land were vegetarians are more in number than the meat/chicken eaters. Often being a vegetarian is linked with being religious. Though it’s completely a personal choice, the households where meat/chicken is not made are strictly against the non-vegetarian food and follow complete religious duties to maintain the same.
All around the world a new “ism” has come to practise i.e. the “veganism”. To be a vegan means that you will not only be condemning meat non-vegetarian food but also the product. That means to will not use, eat, and purchase anything that is made for animals. Milk, cheese, eggs etc all are prohibited. The idea of veganism was to stop atrocities committed against animals and only used plant-based diet or use plant-based products.
Though, this is confined to some as all don’t follow the same rules of veganism as the other might. Usually, the vegans found are more indulged and confined to plant-based foods. Vegetarian includes milk and milk products but not all Indian dishes include milk or cheese in them. This gives the vegan as well as vegetarians a lot of variety to choose and enjoy from.
Vegetarian Pulao
One of the famous variety of rice dishes is the vegetarian pulao aka veg biriyani. This rice dish is packed with beans, cauliflower, carrot, onions, potato, peas, ginger and garlic and very aromatic flavours. It is served with curd and salad relish. Some prefer adding cream to pulao instead of curd and this gives a very tasty twist the pulao dish. Pulao can be eaten as it is. Those who are lactose intolerant or are vegan can choose to drop the curd and enjoy the pulao with a salad relish of their choice or any pickle that you may like.
Channa Masala with Laccha Parantha
Channa i.e. the white chickpeas are boiled and then cooked with onion and tomatoes with a blend of special spices that include cardamom pods, cumin, garam masala etc. to give it a spicy hit. Laccha paranthas is a shallow fried layered flatbread made of wheat that can be eaten as it is with a pickle or enjoyed with pretty much any “sabzi” the Indian vegetable dishes.
Mixed Vegetable with any Indian flatbread
Mixed vegetable in Indian includes a mix of vegetables like beetroot, peas, carrots, potato, mushrooms etc. and created into a delicious dish with a blend of spices that can be enjoyed with any kind of Indian flatbread. Usually “missiroti” is preferred but can be eaten with “tandoori roti” as well. You will simply love it.
Rajmah Chawal
The red kidney beans i.e. the rajmah are boiled and then cooked in a paste of onion and ginger with garlic and all other spices including the garam masala. “Chawal” means rice which is usually steamed or boiled and are enjoyed greatly with the rajmah. This can be compared to the chilli that people enjoy in the western countries. It can be served with curd to cut the heat or can be enjoyed just the way it is with some salad relish. Usually, t is served with vinegar onions which add the extra flavour to the dish.
